as head chef, i am looking over all cooking, ordering and HSE as well as the sustainability bits
yes, mainly fermenting and looking at how to use waste better
it was good but not really what i expected

from my sector chef and regional chef, they were there to help were i needed it
hit training was and is very good
they are skills i will develop into
as a cohort we support each other and compass events when needed

it has amazing standards, forward thinking which you want to be and not behind the curve
work hard and get yourself a good reputation, dont be scared to work out of your comfort zone as the support is there- challange yourself then the world will be your oyster
