Opening up the kitchen, cooking breakfast, and then larder section or main section for lunch. Evening service involving prepping and cooking and and covering evening service of 140 guests as chef in charge, closing down including hand over and breakfast set for the morning chefs and also HSO book to record all aspects. also weekly chemical order and stock rotation to achieve 100 % customer satisfaction and also to work wiyh yhe team.
As a 54 year old man joining the team as a KP and with Compasses support I am now coming to my final EPA at level 2 NVQ commie chef. Compass are also supporting my learning by have giving myself the time to work in other kitchens such as Twickenham stadium and Buckingham Palace garden party's in May, and other means to learn my trade.
As a tradesman in the interior fit out industry for 44 years and changing carrier at the age of 54 the catering industry was a 360 degree change of trade. I have found a vocation which I love and have come to understand that key elements such as team work, measurements, weights and such like are so much not that different from interior fit out. I have had to adjust myself from a self employed man and a company owner and director to being a employed person and also to learn new skills on site and also at external classes. At first this was alien to me but I embraced this and my satisfaction and confidence are at 100 % levels which makes myself want to do more.
As my previous comments I found learning with modern technology very demanding. With the help of my trainer who went the extra mile for me I was able to understand what the structure of the learning modules. Since then I have found that the organisation and the structure have been designed to support all but I still have difficulties and I feel more should be explained to the older student at the start with learning to over come this.
My employer has supported myself throughout and have also given and pushed myself the opportunities to succeed in my chosen trade.
I have received nothing but help and understanding as my previous comments.
My onsite training has enabled myself to achieve my qualification but with my training provider I feel that that the qualification is a goal which can be reached much faster. With my training provider I have learnt the Knowledge I have learnt has enabled myself to reach the goals.
Not in my working environment but they are available amongst the compass group. this is something which should be encouraged as a team building and commitment in the future.

Because at the age of 54 they committed to employing a older person seeking a career change and have also put myself though learning by the NVQ2. The support has been 100 % and I feel like a family around you.
