I am a sous chef so I help with the day to day running of the kitchen however also have taken control the food ordering, stocks and training. Outside of the business I help out other sites by training head chefs or simply supporting their pub with services or stocks.
In regards to work I haven't learnt that many new skills as my course is for someone looking to progress into a kitchen team leader role. However I have learnt numerous new skills with fresh food cooking, learning about different food groups and how to adapt recipes in various ways.
I have really enjoyed it from the start, it has opened up a lot of new opportunities for me and allowed to to develop my passion with in cooking
Considering we have 2 different coaches, one practical and one theoretical they link up very well and do not clash at all.
When ever an opportunity arises they are very supportive of me and also my development. They have also helped me in any way I need with the theoretical elements of the course; innovation I can ask them and gain support and knowledge from them no matter what the subject is.
Red - my training coach - has been excellent from the beginning, no matter what time I can either ring him or message him and he will get back to me instantly. My practical coaches have guided me through all of my home learning and sessions in the academy. They're very understanding with issues.
At this level it hasn't really helped me that much however I know that when I move up and complete my level 3 and my level 4 these will be very beneficial as to running the kitchen and supporting other pubs. I also feel it will help me develop further in my career
There have been a lot of extra curricular activities out of the workplace that I have taken part of including cooking at Mitchell and Butler PRIDE awards, competing in MABster chef, winning apprentice of the year and being invited to the house of commons to represent Vintage Inns, all of these have been fantastic.
Yes
It's a good company that pays well. If you wish to progress then there are multiple paths and avenues for you to look down and the company and employers will support you with the development. You can always find the support you need if you look in the right areas.
Utilise the apprenticeship programmes to allow you to develop whether in or outside of Mitchell and Butlers
