My day-to-day role mainly involves managing costs on projects by conducting reviews of costs submitted by the clients. I also regularly conduct measurements using costX to help with my cost reviews.
Yes, I am confident with costX and excel, software which i was unfamiliar with before the start of my apprenticeship. I think my time management has greatly improved by being bale to balance uni work with normal work, and also by prioritising certain tasks.

In some parts I think the degree has helped, but for the most part, most topics studied so far in the degree have not come up as of yet in my daily job role

Yes
Many reasons. A number of different roles within multiple different sectors, there's something for everyone. Also the great office space here in London makes a comfortable working environment and is very collaborative with peers. Also the freedom to work remotely is beneficial.
