My role is catering assistant . Each term we are put on different section which i am currently on hot deli. I follow recipes and cook dishes for break, first lunch and second, this is roughly eight dishes each day. Make sure all food is above 75 degrees and when hot holding ensure the food is 63 and over. After the lunch break are completed we then follow our cleaning job each week is different so this week was the dining hall so I clean the tables, bring in the plates into the kitchen to be cleaned. Change the bin and sweep the hall including under the tables. before cleaning has been done, we always try and prep for the next day recipes.
I have done both, when I started I wasn’t confident with chopping and preparing a few recipes at the time. During this course I have gain so much confidence in my abilities. Learned new knife skills and enhance my cooking abilities to improve my time at the working place.
I really enjoy this programme, it has helped me with my abilities and confidence. I feel more relaxed when new recipes come up. I love creating new dishes and bring them home or to the workplace to show my work that I abbé achieved. I’m very thankful to this programme.
It is well organised and structured As we have always been informed of changes of dates, when there is new tasks to complete. the support on this programme has been amazing every step of the way. The practical days are well structured and organised so all recipes are carried out and it’s enjoyable to make these recipes.
the support I have received from my employer has been amazing. They have supported me every step of the way, aiding me with practise tasks when butchering a chicken for a example I was unsure how to carrying this out so my employer went through it with me so I was confident enough to achieve this.
The support has been amazing throughout this course, going through the recipes step by step and training. If we have any concern then they talk it through with us and make sure we are aware of the task given and provide help so we are prepared for our end of the programme test and gain our qualification.
This programme has helped me so much to perform better in my role because when I first started I didn’t have much confidence in my abilities but throughout this programme I have gained confidence with my abilities to perform my day to day tasks within my workplace. The section hot deli is my weakest in my mind but with what I have learnt throughout this programme has made me more prepared and able to cope better and it is showing in my work.
